It happened on the camera too...not sure about other apps. Do tablets "lock up" sometimes like home computers & need a restart?

A tablet is no different from any other computer.
If a program misbehaves it can slow down or lock up.
It may eventually 'fix' itself, but a simple reboot often cures things.
    Duplicate the situation.
If it happens again, you'll know, if not, you've still got the balance of the warranty time.

Even physically diminutive chips like the Tegra 3 have built-in thermal sensor to shut things down, though it would have to be a very hot day to trigger that. Maybe 120 in the sun could heat up a tablet a lot, though that would take a while, and I doubt Paresh would be sitting in that anyway.

Paresh, Android can't be directly compared to Windows, but having its roots in Linux, its memory management is very good, and hard freezes are very rare. Like any operating system, though, it can be affected by a bad app.

Have you tried a stylus to see if things respond better?

Haven't tried a stylus yet...so far so good since the non-responsive day. any way to tell which app might be at fault, if it was an app. And no I wdn't be out in 120 degrees!!!!

    Only by process of elimination.
Factory reset, then add apps one at a time, waiting a good amount time in between.
If it's going to act up, you'll see it. If not, you won't.
Maybe doing the reset itself will cure it.
Also note numerous reports of N7 FHDs freezing for 5-20 seconds with no apparent trigger or regularity, and the touch screen going non responsive for short to long periods of time.
May or may not be the case, but be aware.
Hasn't been determined to be hard or software yet.
Also seeing some spontaneously rebooting. That may be traced to Wifi, but, again, not pinned down to hard or software.

    Teething pains.....

I have seen some of the reports & am torn between returning it - I have only a few days left - or waiting to see if an update is released that fixes it...but that sounds risky.
